When schedules are tight and temperatures are high, the thought of cooking an elaborate meal in a warm kitchen is just not appealing to the Canvas Gals. Lighter meals and simple, healthy eating is just our style in the summer and this salad inspired by a friend's recipe has evolved and become a staple. So, we thought we would pass it along to you too!

Summer Fruit Salad
Ingredients:
- 1/4 C Arugula
- 1-2 Green Figs
- 2 T Fresh Blueberries
- 1/4 Steamed Corn (cut off the cob)
- 1 T Gorgonzola Cheese
- Rosemary Olive Oil
- Aged Balsamic Vinegar
Directions:
Add Arugula to a bowl and add green figs sliced in quarters, blueberries, and corn. Top with Gorgonzola cheese and drizzle with olive oil and balsamic. Add cracked pepper to taste and enjoy!
Alternatives:
Also excellent with white peaches and grilled chicken for a heartier meal.
